We are a humble cloud kitchen run by an 11 year old, which is a fairly unusual sentence to write on a website, but here we are.
PANdemonium didn't start as a business plan. It started as a Sunday afternoon, a food processor, a slightly too-wet dough, and a lot of stubbornness. Cooking has always been the thing that made time disappear, the kind of hobby where one experiment turns into ten questions, and every failed batch teaches you something the next one gets right.
One kitchen experiment turned into a pan of deep dish pizza that actually worked. Then it turned into a menu.

The crust took the most convincing. Classic deep dish leans on maida, but after a fair amount of testing, a whole-wheat atta version, cold-fermented for a full day and pressed into the pan by hand, turned out just as good, maybe better. Butter-rich, a little nutty, sturdy enough to hold up a very generous amount of cheese.
That first pan, baked upside down, cheese first and sauce last so the crust never turns soggy, is what this whole kitchen is built around. Everything on the menu traces back to that one recipe and the very long list of small fixes it took to get there: the right flour, the right pan, the right bake time, the right amount of patience for a 24-hour dough rest.
PANdemonium is run out of a real home kitchen, built one pan at a time, by someone who is, admittedly, still in school. It is named, quite honestly, after what the kitchen looks like mid-bake: flour everywhere, several bowls in rotation, and a very good pizza coming out the other end of it.
